TITLE: PAN SEARED FISH

- PREHEAT THE OVEN TO 400 DEGREES. SEASON FISH FILLETS VERY GENEROUSLY WITH SALT AND PEPPER

- HEAT A LARGE OVENPROOF SAUTE PAN OVER MEDIUM-HIGH HEAT. ADD THE OIL AND HEAT THROUGH. BEING CAREFUL NOT TO OVERCROWD THE PAN, PLACE THE FISH, PRESENTATION SIDE DOWN. COOK UNTIL CRISP AND GOLDEN BROWN, ABOUT 2 TO 3 MINUTES. CAREFULLY TURN FISH OVER AND COOK 1 MINUTE MORE.

- TRANSFER THE PAN TO THE PREHEATED OVEN, AND COOK UNTIL JUST COOKED THROUGH, ABOUT 1 TO 4 MINUTES MORE, DEPENDING UPON THE THICKENESS OF THE FILLETS. TEMP SHOULD BE 135 DEGREES.

- REMOVE THE FISH FROM THE PAN AND TRANSFER TO WARM DINNER PLATES.
